In my opinion taste is king. If it does not taste good then I don’t want to eat it. This explains why lettuce leaf type diets dont work, I mean do not misunderstand me I like lettuce but I could not live on it.
Here is a fantastic Great tasting Recipe which is highly nutritious and wont break your calorie bank.
Barramundi Poached in spicy tomato sauce with kipfler potato’s
518 Calories for the serve
180 grams fresh Barramundi (or any white fish )
1 x small onion
3 cloves Garlic
1 x can Italian peeled tomatoes
5ml Olive Oil
1 x Teaspoon Chilli Paste
2 x tea spoons chicken stock powder
160 grams Kipfler potatoes
Some fresh Corriander
Get 160 grams of Kipfler potatoes and boil them for about 25 minutes slice the potatoes and set on one side
Chop the onion and chuck it in a saucepan with 1 teaspoon olive oil and 3 cloves fresh of garlic
Put it on the heat (don’t burn it ) but sweat it up then add 80 mil of boiling water.
Add 2 teaspoons chicken stock powder and 1teaspoons chilli paste
Simmer for 10-15 minutes.
Then put the mix in blender with 1 can of Italian peeled tomatoes. Blend until smooth. While blending add some fresh corriander
Place the Barramundi in the tomato broth add the sliced potato and simmer for about 8 minutes or until fish is cooked through ( don’t overcook )
Serve with a scattering of fresh coriander as garnish
